Summer recipe

I realized I haven't posted in a while and haven't posted a recipe in quite some time, so I decided to do both. Here is a wonderful summer desert that I really love. We've always called it Pina Colada Cake, but it doesn't have pineapple in it. Go figure. (Hmmmm...wonder how it would be if you added drained, crushed pineapple to the cake before you topped with coolwhip? May have to try that sometime.) Anyhow, it's really good.

Pina Colada Cake

1 box yellow cake mix
1 can sweetened condensed milk
1 can cream of coconut (found in liquor section)
1 (12 oz.) tub of Cool Whip
1/2 cup shredded coconut

Bake cake according to pkg. directions in 9x13 pan. Allow cake to cool (leave cake in pan). Poke holes in top of cake with end of wooden spoon. In seperate bowl mix together sweetened condensed milk and cream of coconut. Pour over cake. Top with Cool Whip and then sprinkle coconut over this. Cover cake with aluminum foil and place in freezer. Allow to freeze at least 4 hours. When ready to serve, remove cake from freezer and allow to sit approx. 10-15 minutes and then cut and serve as desired. Keep leftover cake stored in freezer.


On the stitching front...I have done a little bit lately. I have been working on LHN's "Faith" Inspirational Verses Thread Pack that I picked up last weekend when out of town at a tiny little needlwork shop I know of in that area. I was hoping to have it finished by now, but hopefully I can finish it by the end of this weekend. Will post picture as soon as I am done.

I started training for my new job this past week. I only had it for 2 days and will have it for 2 more days this week as well. The training was OK. The girl that trained me (I am replacing her) was all over the place and couldn't seem to answer most of my questions. She kept jumping from thing to thing and never really covered anything completely. Not to mention that she kept texting people on her cell phone and kept talking on it as well. Quite annoying! The second day she was over half an hour late for work. The boss had an appt. that morning and I hadn't been given a key yet, so I was stuck out in the heat (remember this is July in Florida!!!) waiting on her. She didn't apologize or anything once she showed up, she was too busy talking on her cell phone! I think, however, that the job will go fairly well once I actually start next month. I think I will find the work quite boring, but it will bring in some money and will work with my schedule.

I plan on going through my stash soon and putting some stuff up for sale. So, keep your eyes peeled for that.

Nancy Drew - cute, not as good as the books, of course
