WIPs & Another Christmas Recipe

Well, Christmas is now only a week away. That is sooooooooooo hard to believe! It seems to have really flew up on me this year. Maybe it's because my son has had a huge project due every week of December at school. The first week it was science fair, last week it was a Spanish family tree complete with pictures, and this week it is a "travel brochure" to Ancient Greece for history!!! Of course, all of this has been made worse by me getting sick, still have a horrid cough and very tired, and now my son is sick as well. UGH!!!! Oh, well. We're trying to plod along.

Here is an update on "Holiday Express" by Stardust

The progress is slow, but at least I'm seeing some progress. :-)

My goal is to have it finished by late summer. Hopefully I can do it.

Here is a WIP..."The Stockings" by Shepherd's Bush.

I really have enjoyed working on this piece. I was hoping to have it finished by Christmas, but with the sickness and all I just don't know if it will happen. I guess we'll have to see.

I thought I would add another Christmas recipe. This is a family favorite. I remember my mother making these when I was little. Now, for anyone that doesn't like dates, please give these a try. I don't like plain dates, but these are wonderful!!!!

Date Nut Balls

1/2 cup butter
3/4 cup sugar
1 (8 oz) pkg pitted dates, chopped
2 1/2 cups crisp rice cereal
1 cup chopped pecans
Flaked coconut
Powdered sugar

Combine, butter, sugar and dates in a medium saucepan. Bring to a boil; cook, stirring constantly, over medium/high heat for 3 minutes. Stir in cereal and pecans; cool to touch. Shape into 1 inch balls and roll in either coconut or powdered sugar (if desired). Store in air tight containers. Yield: approx. 4 dozen (we call the powdered sugar balls "Snowballs" and the coconut balls "Snowflakes".)

Hope everyone has a wonderful Christmas.

Sorry to read that you're sick and so is your son, now! Sharing everything? That's what DD and I do too. lol...
Your Raise the Roof designs are great (hadn't noticed last time I visited), and it must be frustrating to not be able to work on the stockings as much as you wish. Your train is coming along very very nicely, and I love the change from other projects we can see here and there!
Merry Xmas to you too!
